Parmesan Sauce Steak (Printable Version)

Tender steak bites in garlic butter teamed with a velvety parmesan cream sauce, all over cheesy mashed potatoes. The perfect cozy meal.

# What You'll Need:

01 - 4 lbs russet potatoes.
02 - 6 tablespoons salted butter, melted.
03 - 1.5 cups heavy cream.
04 - 4-5 tablespoons avocado oil.
05 - 3/4 cup shredded monterey jack cheese.
06 - 3/4 teaspoon salt.
07 - 2 tablespoons smoked paprika.
08 - 1 teaspoon garlic powder.
09 - 10 cloves garlic, minced and divided.
10 - 1 teaspoon black pepper.
11 - 1 teaspoon red pepper flakes.
12 - 5 tablespoons butter, divided.
13 - 1/2 teaspoon pepper.
14 - 1 tablespoon onion powder.
15 - 2 teaspoons garlic powder.
16 - 1 tablespoon cayenne pepper.
17 - 2 green onions, diced.
18 - 2/3 cup grated parmesan.
19 - 1 cup warmed half and half.
20 - 1/2 teaspoon dried oregano.
21 - 1/2 teaspoon dried thyme.
22 - 2 lbs steak (filet, ribeye, or sirloin).

# Steps to Follow:

01 - Cut potatoes into quarters after peeling. Soak them in cold water for about 10 minutes. Slice steak into smaller pieces, around 2 to 3 inches. Coat with avocado oil and seasoning. Let it sit at room temperature for 10 to 15 minutes.
02 - Boil the drained potatoes in salted water. Once they're soft enough for a fork to go through, drain and mix in butter, cheese, cream, and seasonings. Mash until creamy.
03 - Get a skillet hot over medium-high heat and add some avocado oil. Cook steak pieces without moving them for 2 minutes, then flip. Let them cook another minute before lowering the heat and cooking one more minute. Move steak to a bowl. Add butter and garlic to the skillet, toss back in the steak, and coat well. Cook for another minute before removing.
04 - Add leftover butter and the remaining garlic to the pan. Slowly pour cream in while whisking, then simmer for 3 to 5 minutes. Stir in parmesan, scallions, and pepper flakes. Keep whisking until it thickens.
05 - Spread mashed potatoes on a plate. Lay the steak over them, and drizzle with the creamy sauce.

01 - Stick with oils that handle high heat, like avocado oil.
02 - Bring steak to room temp before cooking to get better results.
03 - Don’t crowd the skillet while cooking steak. Leave space between pieces.
