Steak Bites Garlic Butter (Print Version)

# Ingredients:

→ Steak Components

01 - 4-5 tbsp avocado oil
02 - 2 lbs steak (sirloin, ribeye, or filet)

→ Creamy Parmesan Sauce

03 - 10 garlic cloves, minced and split into two portions
04 - 1 and 1/2 cups heavy whipping cream
05 - 1 tsp crushed red pepper flakes
06 - 5 tbsp butter, split
07 - 2 diced green onions
08 - 2/3 cup parmesan cheese, grated

→ Mashed Potatoes with Cheese

09 - 1 cup warmed half-and-half
10 - 4 lbs russet potatoes
11 - 6 tbsp melted salted butter
12 - 3/4 tsp salt
13 - Pepper for seasoning (as preferred)
14 - 1 tsp garlic powder
15 - 3/4 cup monterey jack cheese, shredded

→ Blackened Spice Mix

16 - 1 tbsp cayenne pepper
17 - 1 tsp dried oregano
18 - 1 tsp ground black pepper
19 - 2 tbsp smoked paprika
20 - 1 tbsp onion powder
21 - 1/2 tsp dried thyme
22 - 1 tsp salt
23 - 2 tsp garlic powder

# Instructions:

01 - Slice steak into pieces about 2–3 inches wide. Coat with avocado oil and sprinkle on the blackened seasoning. Allow to sit at room temperature for about 10-15 minutes.
02 - Wash, peel, and cut potatoes into chunks. Submerge in cold water for about 10 minutes. Drain, then boil in salted water until soft enough to mash.
03 - In a large skillet, heat up some avocado oil over medium-high heat. Place steak in the pan and cook for 2 minutes without moving it. Flip, let cook another minute. Lower the heat and cook 1 final minute.
04 - Stir butter and minced garlic into the pan. Cook just until you can smell the garlic. Toss the steak in this garlic butter, then remove from the pan and cover it loosely with foil.
05 - Using the same pan, add another portion of butter and more minced garlic. Pour in the cream, let it cook down 3-5 minutes. Add grated parmesan, red pepper flakes, and green onions. Whisk until it starts to thicken.
06 - After draining, mash the boiled potatoes. Add melted butter, warm half-and-half, shredded cheese, plus all seasonings. Stir until everything is blended and creamy.
07 - Layer the mashed potatoes on your plate, top with steak cuts, and cover with the creamy parmesan sauce to finish.

# Notes:

01 - Use oils that handle heat well for searing steaks better.
02 - Cook steak in batches so the pan isn’t overcrowded.
03 - Dial back on cayenne and red pepper if you prefer less spicy flavors.
