Chicken Spaghetti Lo Mein (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 green onions, chopped to sprinkle on top
02 - 3 garlic cloves, finely chopped
03 - 2 cups of assorted veggies (like broccoli, carrots, and bell peppers)
04 - 8 oz of spaghetti
05 - 2 tbsp of vegetable oil
06 - 1 lb of chicken breast, cut thin

→ For the Sauce

07 - 1/4 cup soy sauce
08 - 2 teaspoons sesame oil
09 - 1 teaspoon of sugar
10 - 1/2 cup chicken stock
11 - 1 tsp cornstarch mixed in 2 tsp water
12 - Salt and black pepper to your liking
13 - 1/2 tsp ground ginger
14 - 2 tbsp oyster sauce

# Instructions:

01 - Boil the pasta as per the directions on the package. Once done, rinse under cold water and set aside.
02 - Pour 1 tbsp of oil into a hot skillet over medium-high heat. Toss in the chicken slices, sprinkle with some salt and pepper, and cook while stirring for around 5-6 minutes. Take out and keep aside.
03 - Using the same pan, add the remaining oil. Sauté garlic for a few seconds, then toss in the veggies and stir-fry for about 3-4 minutes till they're tender but still a bit crisp.
04 - Put the chicken back in the pan. Stir in soy sauce, oyster sauce, sesame oil, sugar, ginger, and chicken broth. Allow it to bubble softly for 2 minutes, then mix in the cornstarch slurry to give it some thickness.
05 - Add the cooked pasta into the pan with the sauce, chicken, and veggies. Toss it until it's all nicely mixed up. Top with green onions and serve while warm.

# Notes:

01 - Spice it up with a pinch of red chili flakes or a splash of hot sauce
02 - Switch out chicken for shrimp or tofu if you want to change it up
03 - It reheats beautifully for tomorrow's lunch!
