Mix water, sugar, salt, and oil in a medium pot. Heat until it starts boiling over medium to high heat.

Take the pot off the stove and stir the flour in until smooth. Let everything cool for about 10 minutes.

In a big pan, heat up 2 quarts of oil to 375°F (190°C).

Spoon the dough into a piping bag fitted with a star-shaped tip.

Pipe strips of dough straight into the hot oil. Fry each strip for about 2 minutes on each side until crispy and golden. Drain the pieces on paper towels.

In a flat dish, blend the cinnamon and sugar. Roll the fried churros around until fully covered.
