Crispy Pork Chops Gravy (Print Version)

# Ingredients:

→ Pork Chops

01 - 4 boneless pork chops, around 1/2 inch thick
02 - 1/2 cup oil for frying
03 - 1 cup regular flour
04 - 1 teaspoon paprika (smoked)
05 - 1 teaspoon onion powder
06 - A pinch of cayenne (optional)
07 - 1 teaspoon garlic powder
08 - Salt and pepper to your taste
09 - 2 large eggs
10 - 1/2 cup milk

→ Bacon Gravy

11 - 4 slices bacon, diced
12 - 1/2 teaspoon garlic powder
13 - 2 tablespoons regular flour
14 - Salt and pepper to your liking
15 - 2 cups whole milk

# Instructions:

01 - In a shallow dish, stir together the flour, paprika, garlic powder, onion powder, cayenne, plus salt and pepper. Whisk eggs and milk in a different bowl to create the wash.
02 - Dunk each pork chop into the spiced flour, dip into the egg mixture, then coat again with flour. Rest them for 5-10 minutes so the breading sticks better.
03 - Warm the oil in a big pan over medium heat. Fry chops for about 4-5 minutes per side until golden brown and fully cooked (145°F inside). Use paper towels to drain the extra oil.
04 - In the same skillet, fry the diced bacon until crispy. Pour off everything but 2 tablespoons of grease and remove the bacon bits. Add flour to the grease and cook for about a minute.
05 - Pour milk in slowly as you whisk until it’s velvety. Cook for 3-4 minutes to thicken. Add garlic powder, salt, and pepper. Toss in the crispy bacon bits before serving.

01 - Letting the chops rest before frying makes them crispier
02 - Stir in some chicken broth to thin the gravy if it’s too thick
03 - Tastes amazing with green beans, collard greens, or mashed potatoes
