Florida Shrimp Pie (Print Version)

# Ingredients:

→ Crust

01 - 1 thawed Pillsbury™ Deep Dish Pie Crust

→ Filling

02 - 1/2 cup of onion-and-chive cream cheese spread
03 - Four extra-large eggs
04 - 12 oz. of frozen pre-cooked shrimp, tails removed, chopped, thawed
05 - 1/2 cup of shredded pepper Jack cheese

# Instructions:

01 - Preheat oven to 375°F with a cookie sheet inside. Defrost the pie crust for 10-20 minutes. Use a fork to poke holes on the bottom and sides. Put it on the hot cookie sheet and bake 9-11 minutes until golden and slightly firm.
02 - Whip the cream cheese spread until creamy and smooth. Mix in one egg at a time, making sure each blends well. Stir in the chopped shrimp and shredded pepper Jack cheese last.
03 - Pour the filling into the crust you already baked. Put it back on the cookie sheet and bake for 30-35 minutes until golden on top and the middle doesn't jiggle anymore.
04 - Leave it to rest for 15 minutes before you slice it up and serve it warm.

# Notes:

01 - Drain shrimp well so the filling doesn't turn watery
02 - Works as a full meal or cut it into bite-sized pieces for a snack
