Mint Oreo Bars (Print Version)

# Ingredients:

01 - 40 mint-flavored Oreo cookies, split into portions.
02 - 4 tbsp of melted butter.
03 - 3 blocks (24 oz) of room-temp cream cheese.
04 - 3/4 cup of white sugar.
05 - 3/4 cup of sour cream, also room temp.
06 - 1/2 tsp of vanilla extract.
07 - 1 tsp of mint extract.
08 - 1/2 tsp salt.
09 - 3 large eggs, at room temp.
10 - A bit of green food dye, if you'd like.

# Instructions:

01 - Warm your oven to 325°F. Line a 13x9 pan with parchment, leaving some to stick out over the edges.
02 - Grind 26 Oreos to crumbs in a processor, mix with melted butter. Pack it into the pan, bake for 10 minutes.
03 - Whip cream cheese until soft and creamy. Toss in sugar, sour cream, flavor extracts, and salt.
04 - Mix in eggs one by one. Add food dye if you want color.
05 - Fold in half the chopped Oreos left over. Pour the mixture over the crust, sprinkle the rest on top.
06 - Bake for 40 minutes. Let it cool on the counter for an hour, then refrigerate for 3 hours before slicing.

# Notes:

01 - Set ingredients out so they’re not cold.
02 - Make sure to chill it fully before slicing.
03 - A slightly jiggly center is normal when done baking.
