Cajun Chicken Pasta Bowl (Print Version)

# Ingredients:

01 - 1 tablespoon butter.
02 - 2 teaspoons smoked paprika.
03 - 1 tablespoon olive oil.
04 - 1 teaspoon thyme.
05 - 1/4 teaspoon black pepper.
06 - 1 teaspoon oregano.
07 - 1/4 teaspoon salt.
08 - 1/2 teaspoon onion powder.
09 - 1/4 teaspoon cayenne pepper.
10 - 1/2 teaspoon garlic powder.
11 - 1 yellow onion, diced.
12 - 1 can (15 oz) fire roasted diced tomatoes.
13 - 1 pound boneless skinless chicken breast.
14 - 1/2 pound penne pasta.
15 - 2 cups chicken broth.
16 - 3 green onions, sliced.
17 - 2 ounces cream cheese.

# Instructions:

01 - Stir together all the Cajun spice ingredients in a small container.
02 - Dice the chicken into small chunks and cover it well with the seasoning mix.
03 - Melt butter in a wide pan with olive oil over medium heat.
04 - Toss the seasoned chicken into the pan and cook until it turns golden.
05 - Stir in the chopped onion and let it soften for about two minutes.
06 - Pour in pasta, chicken broth, and the can of tomatoes, including the liquid.
07 - Bring it to a boil, then lower the heat, cover it up, and let it gently cook for 10 minutes.
08 - Stir occasionally so the pasta doesn't stick while it cooks until tender.
09 - Stir in cream cheese until it's fully melted into the mixture.
10 - Scatter green onions on top before serving it up warm.

01 - A deep skillet works great for this dish.
02 - Make sure to stir now and then so the pasta doesn't stick at the bottom.
