Pour olive oil into a large skillet or Dutch oven and let it heat up on medium heat.

Toss in minced garlic and the onion. Stir and cook for a couple of minutes until the onion softens and smells great.

Add the ground beef to the pan. Break it up as it cooks, and stir for about 5–7 minutes until it's no longer pink.

Mix in the potato cubes and bell pepper pieces. Sprinkle with cumin, paprika, salt, and black pepper. Stir well so everything is coated.

If the potatoes need extra moisture, add beef broth or water. Cover with a lid, turn the heat down, and let it cook for 15–20 minutes, stirring a couple of times.

Take off the lid and continue cooking for a few minutes to let any leftover liquid evaporate.

Taste it and adjust with salt or pepper to suit your preference.

Scatter some sliced green onions on top before bringing it to the table. Serve alongside crusty bread or your favorite salad!
