Lay the pitted Medjool dates sticky-side up on a sheet of plastic wrap. Cover with parchment paper and use a rolling pin to evenly roll them out. Patch gaps or tears using your fingers if necessary.

Place the apple at the center of the flattened dates. Using the plastic wrap as a guide, mold the date layer around the apple, pressing firmly to ensure it adheres. Remove the plastic wrap and set the apple aside.

Combine the chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second increments, stirring after each round, until the mixture is smooth and fully melted.

Dip the date-wrapped apple into the melted chocolate until evenly coated. Sprinkle the chopped peanuts over the surface while the chocolate remains wet.

Place the apple on a parchment-lined plate and freeze for 20 minutes to set. Slice into wedges or enjoy whole.
