Three Cheese Lasagna (Print Version)

# Ingredients:

→ Meaty Sauce

01 - 24 oz marinara sauce
02 - 1 tablespoon olive oil
03 - 1 pound ground beef (80-85% lean)
04 - 1/4 teaspoon black pepper
05 - 1 medium onion, chopped small
06 - 1/2 teaspoon fine sea salt
07 - 2 tablespoons fresh parsley, diced up
08 - 1/4 teaspoon ground thyme
09 - 2 large garlic cloves, shredded or minced
10 - 1/2 teaspoon granulated sugar
11 - 1/4 cup beef broth or red wine (your pick)

→ Cheesy Layer

12 - 4 cups shredded mozzarella (save some for topping)
13 - 1 large egg
14 - 15 oz ricotta cheese (reduced fat works great)
15 - 16 oz low-fat cottage cheese
16 - 2 tablespoons parsley, finely minced

→ Pasta Sheets

17 - 9 flat lasagna noodles

# Instructions:

01 - Brown your beef and onions together in a pan with oil. Throw in the garlic, broth (or wine!), marinara, and spices. Let it bubble for about 5 minutes.
02 - Blend the cottage cheese, ricotta, 1 cup of the mozzarella, egg, and parsley into a creamy mixture.
03 - Cook the pasta strips in salted water until they’re slightly firm. Drain, then cool them down in some cold water.
04 - Put down layers of sauce, noodles, and cheese. Wrap tightly with foil and heat in the oven at 375°F for 45 minutes. Once cooked, broil the top until bubbly and golden.

# Notes:

01 - Cool for half an hour before slicing
02 - Stick toothpicks under the foil to avoid sticking
03 - You can prep and chill it ahead of time
