Cajun Chicken Joes (Print Version)

# Ingredients:

01 - 1 small onion, finely chopped.
02 - 1 bell pepper, chopped.
03 - 1 lb of ground chicken.
04 - 2 minced garlic cloves.
05 - 1 can (8 oz) of tomato puree.
06 - 1/4 cup of ketchup.
07 - A tablespoon of Worcestershire sauce.
08 - 1 tsp of smoky paprika.
09 - Salt and pepper, adjust to your taste.
10 - One tablespoon Cajun spice mix.
11 - 4 burger buns.
12 - A tablespoon of olive oil.
13 - Optional extras: Sliced pickles, coleslaw, shredded cheese.

# Instructions:

01 - Drizzle olive oil into a big pan, then set it to medium heat.
02 - Throw in the onion and bell pepper. Soften them for 3-4 minutes.
03 - Cook the garlic for a quick minute.
04 - Add in the ground chicken, breaking it apart, and cook till it's not pink (about 5-7 minutes).
05 - Stir in the tomato puree, ketchup, Worcestershire, Cajun seasoning, paprika, salt, and pepper.
06 - Let it simmer for 10 minutes so the flavors combine well.
07 - Toast the buns until they're just golden brown.
08 - Pile your chicken mix onto the buns. Top with pickles, cheese, or coleslaw if you'd like.
