Shrimp Pasta Jamaican Style (Print Version)

# Ingredients:

01 - 1 pound shrimp, deveined and peeled
02 - 1 medium onion, chopped finely
03 - 1 can coconut milk (14 ounces)
04 - 8 ounces of linguine or fettuccine
05 - 2 cloves of minced garlic
06 - 1 tablespoon of olive oil
07 - 1 diced bell pepper (yellow or red)
08 - 1 tablespoon lime juice (freshly squeezed)
09 - 1 tablespoon of jerk seasoning
10 - Salt and pepper to your liking

→ For Serving

11 - A quarter cup of fresh cilantro, roughly chopped
12 - Wedges of lime

# Instructions:

01 - Boil your pasta in salty water till it’s firm but cooked (about 8 to 10 minutes). Save a cup of that water, then drain it off.
02 - Warm the olive oil in a wide pan over medium heat. Toss in the onion and cook it until soft (3-4 minutes). Then add garlic and bell pepper, cooking a couple more minutes.
03 - Turn the heat to medium-high. Add the shrimp, flavor with jerk seasoning, salt, and pepper, and cook for 3-4 minutes until they’re pink.
04 - Pour in coconut milk and fresh lime juice. Let it bubble gently for 3-5 minutes to mix the flavors. Use the reserved pasta water to thin it out if it seems thick.
05 - Put the drained pasta into the skillet. Stir it together with the sauce until it’s coated well. Taste and adjust seasoning if it’s needed.
06 - Top it off with chopped cilantro and pass around lime wedges for squeezing.
