Cheesy Potato Burritos (Printable Version)

Seasoned beef, crunchy potatoes, and gooey cheese inside soft tortillas. A fast and delicious meal your family can’t resist.

# What You'll Need:

→ Core Components

01 - 6 big flour tortillas
02 - 2 cups tater tots from the freezer
03 - 1 lb ground beef (swap with turkey or plant-based if you’d like)
04 - 1 cup Monterey Jack cheese, shredded
05 - 1/4 cup chipotle sauce from Taco Bell (adjust the spice to fit your vibe)
06 - 1/2 cup of sour cream
07 - 1 cup cheddar cheese, shredded
08 - A bit of salt and some pepper for seasoning

→ Extras on Top

09 - Fresh cilantro leaves
10 - Diced up tomatoes
11 - Green onions, chopped up

# Steps to Follow:

01 - Heat up your oven and bake the tater tots following the directions on the package. Let them get super golden and crispy—they’ve gotta hold up in the burrito!
02 - While the tots are crisping, grab a skillet and brown that beef. Sprinkle on salt and pepper as it finishes cooking. Drain the excess grease so it isn’t too oily.
03 - Toss the cooked beef, some lightly crushed crispy tots, and both types of shredded cheese into a large bowl. Give it a good mix so everything comes together nicely.
04 - Warm up the flour tortillas—just a few seconds in the microwave or give them a quick warm-up in a dry pan. This stops them from cracking when you roll them!
05 - Scoop a generous portion of the cheesy beef filling into the center of each tortilla. Add a drizzle of that chipotle sauce and a spoonful of sour cream right on top. It’s gonna be perfect!
06 - Fold the sides over the filling, then tuck one end up and roll it all the way into a snug burrito. Make sure nothing falls out!
07 - Line the burritos in a baking dish and sprinkle them with extra cheese. Pop them in the oven just long enough for the cheese to get gooey and bubbling on top.
08 - Take the burritos out of the oven and sprinkle on fresh cilantro, diced tomatoes, and green onions. Add some sour cream and extra sauce on the side, then enjoy while they’re hot!

# Additional Notes:

01 - Turn the heat up by tossing a handful of diced jalapeños into the filling before you roll the burritos.
