Peanut Butter Oatmeal (Printable Version)

# What You'll Need:

01 - 2/3 cup chocolate chips
02 - 1 1/2 cups rolled oats
03 - 1 cup peanut butter
04 - 1/4 teaspoon baking soda
05 - 1/3 cup pure maple syrup
06 - 2 eggs
07 - 1/2 teaspoon sea salt
08 - 1/2 teaspoon ground cinnamon

# Steps to Follow:

01 - Let the cookies chill for about 10 minutes before digging in.
02 - Scoop the dough out and plop it onto your lined cookie sheet—make them whatever size makes you smile. Slide the tray in the oven and keep an eye out for about 9 to 12 minutes, just until they're looking set.
03 - Now, toss in those chocolate chips and give everything a good mix so they're spread out in the dough.
04 - Dump in the oats, sea salt, cinnamon, and baking soda. Keep mixing until you’ve got a thick, sticky dough going on.
05 - Crack the eggs into your mixing bowl and whisk until they’re well blended. Scoop in the peanut butter and maple syrup, stirring until everything's one happy mix.
06 - Fire up your oven to 350°F. Line your big cookie sheet with some parchment so nothing sticks.

01 - Skip the eggs for a totally vegan treat with huge peanut butter flavor. You can keep these cookies on your counter in a container for a couple of days, in the fridge up to 5, or stash them in the freezer for 3 months if you want to save some for later.
