Zesty family meal (Print Version)

# Ingredients:

→ Main Ingredients

01 - 1 cup basmati or jasmine rice (long-grain preferred)
02 - 3-4 chicken breasts, skinless and boneless
03 - 4 minced garlic cloves
04 - 2 tablespoons of olive oil
05 - 2 cups of chicken broth (low sodium)
06 - 1 tablespoon oregano, dried
07 - Juice squeezed from two lemons
08 - Salt and black pepper as needed

# Instructions:

01 - Rinse your rice thoroughly under cold running water until it’s no longer cloudy. This removes starch so your rice turns out fluffy, not sticky.
02 - Combine olive oil, garlic, oregano, lemon juice, salt, and pepper in a bowl. Dunk the chicken breasts into this blend and let them soak for at least twenty minutes. The longer they marinate, the better they’ll taste!
03 - Take out a skillet and warm it over medium heat. Toss in the marinated chicken and cook each side for 6-7 minutes. Look for a golden outside and a cooked-through center (165°F). Once done, let them rest on a plate to keep in the juices.
04 - While the chicken chills, grab a pot and boil your chicken broth. Pour in the prepared rice and reduce the heat to low. Cover tightly with a lid and let it gently cook for about 15 minutes, or until the liquid vanishes.
05 - Take a fork to your rice and fluff it, ensuring it’s light and airy. Slice up your rested chicken and lay it over the warm rice. The juices from the chicken blend with the rice for extra taste!

# Notes:

01 - A sprinkle of chopped dill or parsley on top gives an extra kick of freshness.
02 - Want to up the veggies? Toss in spinach or diced bell peppers when cooking the rice for added texture and nutrients.
03 - This meal pairs beautifully with a classic Greek salad or some oven-roasted veggies.
