Rinse your rice thoroughly under cold running water until it’s no longer cloudy. This removes starch so your rice turns out fluffy, not sticky.

Combine olive oil, garlic, oregano, lemon juice, salt, and pepper in a bowl. Dunk the chicken breasts into this blend and let them soak for at least twenty minutes. The longer they marinate, the better they’ll taste!

Take out a skillet and warm it over medium heat. Toss in the marinated chicken and cook each side for 6-7 minutes. Look for a golden outside and a cooked-through center (165°F). Once done, let them rest on a plate to keep in the juices.

While the chicken chills, grab a pot and boil your chicken broth. Pour in the prepared rice and reduce the heat to low. Cover tightly with a lid and let it gently cook for about 15 minutes, or until the liquid vanishes.

Take a fork to your rice and fluff it, ensuring it’s light and airy. Slice up your rested chicken and lay it over the warm rice. The juices from the chicken blend with the rice for extra taste!
