Combine the salt, onion powder, pepper, garlic powder, and smoked paprika in a small dish.

Portion the ground beef into eight 3-ounce balls and shape them lightly with your hands.

Turn your flat-top grill to medium heat. Let the bacon fry up crispy for about 8-10 minutes, then transfer to a plate lined with paper towels.

Melt butter on the grill. Drop in the sliced onions, coat them well, and sprinkle a bit of the seasoning on top. Stir often and cook until golden and soft, around 8-10 minutes, then move off the heat.

Crank up the heat to high and oil the grill lightly with vegetable oil.

Sprinkle some seasoning on the top of each meatball, then put them on the grill seasoned-side down. Use parchment paper and a press to flatten them thin, concentrating on smashing the edges.

Dust a little more seasoning on top of the patties. Let them cook for about 2 minutes until the edges start to look crispy and browned, then scrape and flip them over.

Brush BBQ sauce onto the cooked side, then quickly lay a slice of Cheddar on each patty. Let it melt, about 2 minutes.
