Egg White Bites (Print Version)

# Ingredients:

→ Protein Base

01 - Monterey Jack cheese, shredded
02 - Low-fat cottage cheese
03 - Egg whites, fresh

→ Vegetables

04 - Chopped green onions for garnish
05 - Spinach, fresh leaves
06 - Red peppers, roasted and diced
07 - Minced fresh garlic

→ Seasonings

08 - Garlic powder
09 - Salt

# Instructions:

01 - Set the temperature to 350°F and let it heat up.
02 - Blend together the egg whites, cottage cheese, garlic, seasonings, and most of the shredded cheese until creamy.
03 - Quickly pulse in half the spinach and most of the roasted peppers.
04 - Layer the remaining cheese and vegetables, then pour the egg mixture until molds are about three-quarters full.
05 - Cover with foil, place molds in a water bath, and bake for an hour.

# Notes:

01 - Using a water bath makes them soft and tender.
02 - Great for planning meals ahead for the week.
