Beef Zucchini Sweet Potato (Printable Version)

01 - 2 medium zucchinis, chopped up
02 - 1 large sweet potato, cubed after peeling
03 - 450 g ground beef
04 - 2 garlic cloves, chopped fine
05 - 1 onion, small, diced finely

→ Seasonings and Garnishes

06 - Fresh parsley, diced, to toss on top
07 - 2 tablespoons olive oil
08 - Black pepper, use as much as you want
09 - Salt to your liking
10 - 1 teaspoon dried oregano
11 - 1 teaspoon smoked paprika

# Steps to Follow:

01 - Once you've turned off the heat, splash on those parsley bits. Dish up while it's still hot.
02 - Toss the zucchini chunks in now, leave the lid off, and let them cook for 5 minutes. You want them tender, not mushy.
03 - Drop in those sweet potato cubes and hit them with paprika, oregano, salt, and black pepper. Lid on and stir here and there for about 10 minutes till they're soft.
04 - Add the beef next and crumble it with your spoon as it starts cooking. Let it brown, no pink left, for about 5-7 minutes. If there's a lot of grease, pour some off.
05 - Drizzle olive oil into your big pan over medium heat. Toss in the onion and garlic. Let them cook for a few minutes so they smell great and turn soft.
