Melt 1 tablespoon of butter in hot oil. Cook half the chicken until it turns golden, about 4 minutes on each side.

If the pan looks dry, add more oil. Finish cooking the rest of the chicken, then transfer all to a plate.

Turn the heat down, toss in the garlic and remaining butter, and cook for a minute or two until you get the aroma.
