Stir gelatin into water and let it absorb. Microwave briefly, then set aside to cool a bit.

Blend together the cream, condensed milk, passion fruit pulp, and melted gelatin for about 5 minutes.

Spoon into serving glasses and pop them in the fridge to set for at least 3 hours.

Simmer fresh passion fruit with sugar until thick. Leave it to cool down completely.

Spoon the cooled sauce on top of the chilled mousse before serving.
