Easy Frito Pie (Print Version)

# Ingredients:

01 - 1 small onion, finely chopped.
02 - 1 pound of ground beef, lean preferred.
03 - A packet of taco seasoning mix.
04 - 2/3 cup of plain water.
05 - A 10-ounce can of enchilada sauce.
06 - 1 can of pinto beans (15 ounces), rinsed and drained.
07 - 9.25 ounces of Fritos corn chips.
08 - 2 cups of shredded Mexican-style cheese.
09 - 1 green onion, sliced thin.
10 - Sour cream to put on top.
11 - Guacamole for garnishing.

# Instructions:

01 - Preheat your oven to 350°F. Coat a 9x13 baking dish lightly with cooking spray.
02 - In a big skillet, cook the ground beef along with the onion until browned. Then, drain off the grease.
03 - Pour water and taco seasoning into the skillet with the meat. Stir frequently and let it simmer for around 3-4 minutes.
04 - Combine the enchilada sauce and drained beans with the beef mixture, stirring everything together well.
05 - Spread 4 cups of Fritos evenly in the dish, sprinkle with 1 cup of cheese, and pour the meat mixture over that. Finish with the rest of the cheese.
06 - Bake for 18-20 minutes until it's bubbly and heated through. Once done, sprinkle the top with Fritos.

# Notes:

01 - Let it cool down for a few minutes before digging in.
02 - Top it off with ingredients like sour cream, chopped green onions, or guacamole.
03 - For a crispy topping, keep some Fritos aside and add after baking.
