Easy Egg Fried Rice (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 large eggs, whisked
02 - 2 tbsp of neutral or vegetable oil
03 - 2 cups chilled jasmine rice (leftover or day-old is best)

→ Seasonings

04 - 1 green onion, chopped finely
05 - ½ tbsp sesame oil
06 - 2.5 tbsp plain soy sauce

# Instructions:

01 - Pour oil into a pan or wok, heat it up. You can let it get smoky if using a wok, otherwise warming it is fine.
02 - Pour in the beaten eggs and stir quickly until they start forming.
03 - Throw the rice into the pan once your eggs are set but still a bit soft. Break apart any rice chunks as you mix.
04 - Move everything to one side, pour the last bit of oil into the empty space along with the onions. Stir together with rice and eggs.
05 - Drizzle sesame oil and soy sauce along the edges of the pan. Stir until rice looks brown and well-mixed. Remove from heat and enjoy right away!

# Notes:

01 - Using chilled, day-old rice works best for a less sticky result.
02 - Quick stir-frying keeps the rice and eggs from turning mushy.
03 - Drizzling soy sauce on the edges makes the flavors blend better.
