Easy Taco Bake (Printable Version)

Layers of tortillas, beef, and cheese baked to a golden finish, topped with tasty taco toppings.

# What You'll Need:

→ Filling

01 - 1 lb of turkey or ground beef
02 - 1 diced small onion
03 - 2 minced garlic cloves
04 - 2 tbsp of taco mix or one packet
05 - Half a cup of water
06 - 1 can (15 oz) of rinsed black beans
07 - 1 can (10 oz) diced chilies and tomatoes
08 - 1 cup of corn, canned or frozen

→ Layers

09 - 8 small tortillas (corn) or 4 big flour ones, halved
10 - Mexican cheese blend, shredded, 2 cups
11 - Optional: ½ cup of sour cream

→ Extras for Serving

12 - Chopped fresh cilantro
13 - Avocado slices
14 - Diced ripe tomatoes
15 - Jalapeños, thinly sliced
16 - Salsa
17 - A dollop of sour cream

# Steps to Follow:

01 - Set your oven at 375°F (190°C) to preheat
02 - Cook the onion and beef (about 5-7 mins until browned). Toss in garlic, taco seasoning, and water. Add the beans, chilies with tomatoes, and corn. Mix together
03 - Grab a 9x13 dish. Layer it up: tortillas, part of the beef blend, and 1 cup of cheese. Do another round of layers. If you'd like, spread sour cream between layers
04 - Put foil on it, bake for 20 mins. Take off the foil and leave to bake another 10 mins till the cheese’s melted and looks golden
05 - Sit for 5-10 mins to cool, then top it with extras like avocado, jalapeños, or salsa. Enjoy!

01 - Make it a day early and store in the fridge for up to 24 hrs. Try tofu or extra beans instead of meat for a veggie-friendly version
