Fresh Scallion Layers (Print Version)

# Ingredients:

→ Dough

01 - 1/4 cup cold water
02 - 1/2 cup boiling water
03 - 1/2 teaspoon of salt
04 - 2 cups plain flour

→ Filling

05 - 8 green onions, cut into pieces
06 - 3/4 teaspoon of salt
07 - 1/4 cup peanut oil
08 - 1/3 cup of plain flour

→ Dipping Sauce

09 - 1/4 teaspoon of sugar
10 - 1 tablespoon dark vinegar (Chinkiang)
11 - 1 1/2 tablespoons soy sauce

# Instructions:

01 - Stir the flour and salt together. Slowly mix in the hot water first, then the cold water. Knead until steady and let it rest for 20 minutes.
02 - Combine flour, oil, and salt to create a paste. Slice the scallions and get the sauce ingredients ready if you're making it.
03 - Flatten portions of the dough into rectangles. Spread the filling and scallions before rolling it up and shaping it into discs.
04 - In a pan with oil, cook over medium heat, covering for about 5 minutes. Flip to crisp and brown both sides.
