Preheat your oven to 400°F (200°C) and grease a muffin tray generously.

Take a mandoline slicer or sharp knife and cut the potatoes into super thin slices.

Mix the potato slices with melted butter, thyme, grated Parmesan, garlic, and a good pinch of salt and pepper.

Press a stack of the seasoned potato slices into muffin tray cups, adding mozzarella on top if you’d like.

Pop them in the oven for 25-30 minutes until the edges get golden and crunchy.

Let them sit for a couple minutes before taking out of the tray. Serve warm.
