Crispy Parmesan Slices (Print Version)

# Ingredients:

01 - 4 Russet or Yukon Gold potatoes, large size.
02 - 2 tablespoons butter, melted.
03 - 1 tablespoon chopped fresh thyme.
04 - 1 minced clove of garlic.
05 - 1/2 cup Parmesan cheese, grated.
06 - Season with salt and pepper as needed.
07 - Optional: 1/4 cup shredded mozzarella.

# Instructions:

01 - Preheat your oven to 400°F (200°C) and grease a muffin tray generously.
02 - Take a mandoline slicer or sharp knife and cut the potatoes into super thin slices.
03 - Mix the potato slices with melted butter, thyme, grated Parmesan, garlic, and a good pinch of salt and pepper.
04 - Press a stack of the seasoned potato slices into muffin tray cups, adding mozzarella on top if you’d like.
05 - Pop them in the oven for 25-30 minutes until the edges get golden and crunchy.
06 - Let them sit for a couple minutes before taking out of the tray. Serve warm.

# Notes:

01 - Sprinkle on more Parmesan for extra crunch.
02 - You can assemble everything beforehand and bake later.
03 - Try swapping in other herbs you love.
