Loaded Potato Soup (Printable Version)

Warm potato soup with cheese, bacon, and onions in a rich and smooth base. Great for chilly nights.

# What You'll Need:

01 - 4 cups of chicken or veggie broth.
02 - 4 medium russet potatoes, diced and peeled.
03 - 1/2 cup of milk.
04 - 1/2 cup of grated sharp cheddar.
05 - 1 cup of heavy cream.
06 - 6 sliced-up bacon strips that are fully cooked.
07 - 1/2 cup of chopped green onions.
08 - 1/4 cup butter.
09 - 1/4 cup of flour (all-purpose).
10 - 2 minced garlic cloves.
11 - Add salt and pepper as needed.

# Steps to Follow:

01 - Over medium heat, melt your butter. After that, toss in garlic and cook a minute or so till it smells great. Mix the flour in and keep stirring for a couple of minutes until it turns light tan.
02 - Pour in the broth bit by bit while whisking. This stops lumps from forming. Let it come to a light boil.
03 - Dump in the diced potatoes and let them cook gently for 15 to 20 minutes until soft.
04 - Pour the milk and cream in. Warm it all together but don't let it start bubbling.
05 - Stir in the melted cheese, green onions, and bacon pieces until blended. Add a sprinkle of salt and pepper to your taste.

# Additional Notes:

01 - Goes great with crispy breadsticks or toasted bread.
02 - Toss in some steamed veggies like cauliflower or broccoli if you'd like.
03 - Add a dollop of sour cream on top to make it richer.
