Crack Chicken Gnocchi (Printable Version)

# What You'll Need:

01 - 2 small chicken breasts, about 360g total.
02 - 75g smoked back bacon, chopped into small pieces.
03 - 3 1/2 cups chicken stock with reduced sodium.
04 - 500g of potato gnocchi.
05 - 1 shallot, chopped finely.
06 - 2 minced garlic cloves.
07 - 1/2 cup low-fat milk (2%).
08 - 1/2 tablespoon fresh lemon juice.
09 - 175g of Laughing Cow light cheese.
10 - 1/2 tablespoon cornstarch for thickening.
11 - 60g freshly shredded cheddar cheese.
12 - 1 teaspoon dried parsley flakes.
13 - 1 teaspoon dried chopped chives.
14 - 1 teaspoon onion powder seasoning.
15 - 1/2 teaspoon dried dill seasoning.
16 - 1/2 teaspoon garlic powder.
17 - A pinch of salt and black pepper for taste.
18 - Chopped fresh parsley for decoration.

# Steps to Follow:

01 - Slice chicken after simmering it for 10-12 minutes in 2 cups of broth.
02 - Spray your pan lightly and fry bacon bits until crispy.
03 - Use the same pan to soften shallots, then stir in the minced garlic briefly.
04 - Mix the rest of the broth, milk, cheese, lemon juice, cornstarch, and seasonings in the pan.
05 - Stir in gnocchi and chicken. Turn heat down to simmer and let it thicken for 5 minutes.
06 - Move to an oven-safe dish, sprinkle cheese on top, and broil. Toss bacon and herbs over before serving.

01 - Shredded cheese is best when freshly grated.
02 - Keep the leftover poaching stock for the sauce.
03 - Let the sauce bubble a bit to get a thicker consistency.
