Stir together the self-rising flour and cottage cheese in a big bowl until it comes together into a soft, sticky ball. If it’s sticking too much, sprinkle in some extra flour, just a tablespoon at a time.

Scoop the dough onto a floured surface. Cut it into 4 even pieces. Use your hands or a rolling pin to press each one flat into a circle or oval, about 1/4-inch thick.

Warm up a non-stick pan over medium heat. Cook the flatbreads one by one, flipping after 2-3 minutes per side, until you see golden spots and they’re fully cooked.

Eat them warm as-is, or add fun toppings like avocado, honey drizzle, smoked salmon, or hummus.
