# Ingredients:

01 - 1/2 teaspoon salt, to bring out the flavors
02 - 1/4 teaspoon cream of tartar, to keep the egg whites stable
03 - 1/2 cup cottage cheese, pureed until completely smooth
04 - 3 large eggs, separated into whites and yolks, and let sit at room temp

05 - 1 teaspoon honey, or you can sprinkle in a little of your go-to sweetener
06 - 1 tablespoon arrowroot or cornstarch, to make them sturdier

# Instructions:

01 - Start by cranking the oven up to 300°F (150°C). Get your baking sheet ready by covering it with parchment. Separate the yolks and whites into two bowls; take your time doing it carefully.
02 - Toss a little cream of tartar over the egg whites. With your mixer in hand, beat them until those peaks are stiff. You'll know you're there when the mixture stands up without falling.
03 - Mix the yolks with the smooth cottage cheese, the salt, and your starch or sweet ingredient (if you're using them). Whisk until you've got a consistent, creamy blend.
04 - Add the whipped whites to the yolks little by little, mixing with soft, folding motions. Go easy here to keep the fluff intact.
05 - Scoop the batter onto the parchment-covered baking sheet, making 6-8 round blobs. Smooth the tops with your spoon or spatula if needed.
06 - Slide the tray into the oven and bake for roughly 25-30 minutes. Look for a golden brown finish. Once done, leave them there to cool completely before touching them again!
