Slice apples into rounds and remove the cores.

Stir together flour, buttermilk, eggs, vanilla, sugar, baking powder, and salt until it’s smooth.

In a deep skillet or fryer, heat the oil to around 350°F.

Dunk the apple slices into the batter, making sure they’re totally covered.

Let the apple rings fry until they turn golden, flipping them halfway.

Place fried rings on a wire rack to drain off any extra oil.

Stir cinnamon, sugar, and nutmeg in a bowl and toss the warm rings until they’re covered.
