01 - 4 cups chicken stock
02 - 1 pound chicken breasts, without skin or bones
03 - 1 medium onion, diced
04 - 2 large carrots, chopped into small pieces
05 - 1 can (15 oz) white beans, rinsed well
06 - 2 handfuls of fresh spinach
07 - 2 minced cloves of garlic
08 - 2 tablespoons olive oil
09 - Pepper and salt as needed
10 - Chopped fresh parsley for topping
11 - Thick bread for dipping

12 - 1 teaspoon dried thyme
13 - 1 teaspoon dried oregano
14 - Half a teaspoon of crushed red pepper flakes

# Steps to Follow:

01 - In a big pot, heat olive oil over medium. Toss in diced onion and chopped carrots, cooking for 5 to 7 minutes till the onion softens and looks clear
02 - Mix in the minced garlic. Cook it for about 60 seconds, then throw in salt, pepper, oregano, thyme, and some red pepper flakes
03 - Add your chicken and pour in the stock. Bring it to a slow boil. Turn the heat down low, put a lid on it, and simmer for 20 minutes till the chicken is cooked completely
04 - Take the chicken out, shred it using two forks, then dump it back in the pot
05 - Toss in the beans and fresh spinach. Let them warm for about 5 minutes till the spinach wilts nicely and everything is hot
06 - Taste and adjust seasonings as you like. Ladle it into bowls, top with parsley, and serve warm with some crusty bread
