Garlic Parmesan Chicken (Print Version)

# Ingredients:

→ Chicken Prep

01 - 4 chicken breasts (or thighs), no skin or bones
02 - 1 tsp of an Italian seasoning mix
03 - Half a teaspoon of paprika (smoked)
04 - A pinch of salt (½ teaspoon)
05 - ¼ tsp of ground black pepper
06 - 1 tbsp of olive oil

→ Potato Coating

07 - 1½ lbs of Yukon Gold or red baby potatoes, cut in half
08 - Three tablespoons of olive oil
09 - 4 minced garlic cloves
10 - ⅓ cup of finely grated Parmesan
11 - Half a teaspoon of salt
12 - ¼ tsp of black pepper powder

→ Toppings (Optional)

13 - 1 tbsp of fresh parsley, finely chopped

# Instructions:

01 - Turn your oven on to 400°F (200°C). Use parchment paper or lightly oil a big baking sheet to prepare it.
02 - Use paper towels to pat the chicken until it’s dry. Mix together the paprika, salt, Italian spices, and pepper in a bowl. Brush olive oil over the chicken and then coat it with the seasoning mix.
03 - In a roomy bowl, mix the potato halves with Parmesan, minced garlic, oil, salt, and pepper. Make sure every piece is well covered.
04 - Lay the chicken on one side of your baking tray. Add the potatoes on the other side, keeping them in one layer so they cook evenly.
05 - Roast everything for 25-30 minutes in your preheated oven. Flip the potatoes over roughly halfway through. Use a thermometer to make sure the chicken hits 165°F (74°C).
06 - For the last 5 minutes, sprinkle some extra Parmesan over the chicken and potatoes. Put under the broiler for a crispy, golden top.
07 - Take it out of the oven, sprinkle chopped parsley on top, and serve right away!

01 - This makes a great choice for a quick dinner and can work with added sides like green veggies.
02 - The chicken should reach 165°F (74°C) to ensure it’s safe to eat.
03 - For an added zing, drizzle a bit of lemon juice before serving.
