Turn your oven on to 400°F (200°C). Use parchment paper or lightly oil a big baking sheet to prepare it.

Use paper towels to pat the chicken until it’s dry. Mix together the paprika, salt, Italian spices, and pepper in a bowl. Brush olive oil over the chicken and then coat it with the seasoning mix.

In a roomy bowl, mix the potato halves with Parmesan, minced garlic, oil, salt, and pepper. Make sure every piece is well covered.

Lay the chicken on one side of your baking tray. Add the potatoes on the other side, keeping them in one layer so they cook evenly.

Roast everything for 25-30 minutes in your preheated oven. Flip the potatoes over roughly halfway through. Use a thermometer to make sure the chicken hits 165°F (74°C).

For the last 5 minutes, sprinkle some extra Parmesan over the chicken and potatoes. Put under the broiler for a crispy, golden top.

Take it out of the oven, sprinkle chopped parsley on top, and serve right away!
