# Instructions:

01 - Turn your oven to 400°F. Lightly coat the muffin tray with grease.
02 - Whisk the eggs and sour cream together till smooth.
03 - Toss in the cheeses, salt, and chives, and give it a good stir.
04 - Gently mix in the mashed potatoes until it all looks even.
05 - Spoon the mixture into the muffin cups and bake for 20-25 minutes, until they’re crispy and golden.
