Brown the ground beef in a pan over medium heat. Drain the grease, then add taco seasoning and water. Let it cook gently for about 5 minutes to thicken slightly.

Mix together mayonnaise and chipotle sauce in a small bowl. This gives a smooth, smoky flavor boost.

Spread nacho cheese down the middle of a tortilla. Add a fourth of the beef, a half-cup of rice, chipotle mayo, a dollop of sour cream (if you like), and some tortilla strips for crunch.

Tuck in the sides of the tortilla, then roll it up firmly from the bottom to keep everything snug inside.

Warm a non-stick pan on medium heat. Sprinkle a quarter cup of shredded cheese in the pan, then put the burrito seam-side down on top. Let it cook until the cheese forms a golden, crispy crust.
