# Ingredients:

→ For the Filling

01 - 1 envelope taco seasoning mix
02 - 1/4 cup water for simmering
03 - 1 pound of lean ground beef
04 - 2 cups cooked Mexican-style rice
05 - 15 ounces of Rico's nacho cheese
06 - 2 tablespoons of mayo
07 - 1 tablespoon chipotle sauce for flavor
08 - Crispy tortilla strips
09 - Optional: Sour cream for topping

→ For Wrapping It Up

10 - 4 large tortillas (burrito size)
11 - 2 cups shredded Colby Jack cheese mix

# Instructions:

01 - Brown the ground beef in a pan over medium heat. Drain the grease, then add taco seasoning and water. Let it cook gently for about 5 minutes to thicken slightly.
02 - Mix together mayonnaise and chipotle sauce in a small bowl. This gives a smooth, smoky flavor boost.
03 - Spread nacho cheese down the middle of a tortilla. Add a fourth of the beef, a half-cup of rice, chipotle mayo, a dollop of sour cream (if you like), and some tortilla strips for crunch.
04 - Tuck in the sides of the tortilla, then roll it up firmly from the bottom to keep everything snug inside.
05 - Warm a non-stick pan on medium heat. Sprinkle a quarter cup of shredded cheese in the pan, then put the burrito seam-side down on top. Let it cook until the cheese forms a golden, crispy crust.
06 - Turn the burrito over, sprinkle another quarter cup of cheese into the pan, and cook until this side is crusty too. Repeat for the remaining burritos.

# Notes:

01 - Toss in some crumbled Doritos for extra crunch.
02 - Spice it up with slices of jalapeño or more hot sauce.
03 - Want to save time? Make the beef filling in advance.
