Put the carrot slices in a big pot and pour enough water to cover them by about an inch. Let it boil, then turn the heat low, cover, and let it cook for 8 to 10 minutes until they’re tender but still crisp.

Pour out the water and place the cooked carrots to the side for now.

In the same pot, stir together butter, brown sugar, pepper, and salt over medium heat until melted.

Toss the carrots back into the pot. Stir them around for about 5 minutes until they're shiny and coated well with the glaze.

Sprinkle parsley on top if you’d like, then enjoy them warm.
