Sweet Russian Cookies (Print Version)

# Ingredients:

01 - 1 teaspoon vanilla extract.
02 - 1/2 cup sugar, powdered.
03 - 3/4 cup chopped nuts, finely minced.
04 - 1/4 teaspoon table salt.
05 - 1 cup butter, unsalted and softened.
06 - Extra powdered sugar for rolling coated cookies.
07 - 2 1/4 cups plain flour.

# Instructions:

01 - Set oven to 375°F. Cover baking trays with baking paper.
02 - Whip the butter, powdered sugar, and vanilla together until smooth. Add flour and salt, combining until it all comes together.
03 - Mix in the finely chopped nuts. If the mix feels too warm, stick it in the fridge until it's firmer.
04 - Scoop out dough with a tablespoon, roll into balls, and lay them on lined trays.
05 - Bake for 7 to 8 minutes, watching for light browning on the bottoms.
06 - While still warm, roll cookies in powdered sugar. Let cool, then coat them again.

01 - You can swap the nuts for mini chocolate chips.
02 - Try adding cinnamon or nutmeg for extra flavor.
03 - Good for 4 days, or toss in the freezer.
