In a saucepan, toss together blackberries, sugar, balsamic vinegar, lemon juice, and salt. Heat until boiling, lower to a simmer, and mash the berries. Stir occasionally for about 7-10 minutes until thick. Let it cool off.

Cut brie into slices about half an inch thick.

Preheat a skillet over medium heat, making sure it’s not too hot so the cheese has time to melt gently.

Spread butter on one side of 4 bread slices. Lay these slices butter side down in the preheated skillet. Arrange the brie slices on top and sprinkle thyme over them.

Spread the blackberry jam generously on the remaining bread slices. Set these on top of the brie-loaded ones with the jam facing down.

Butter the tops of the sandwiches, flip them, and grill until the bread is toasted golden and the cheese is gooey.
