Brie Blackberry Sandwich (Print Version)

# Ingredients:

→ Blackberry Spread

01 - 6 tbsp sugar
02 - 2 tbsp freshly squeezed lemon juice
03 - 3 tbsp balsamic vinegar
04 - 2 cups ripe blackberries
05 - Pinch of kosher salt

→ Sandwich Ingredients

06 - 8 slices rustic sourdough
07 - Butter for spreading
08 - 1 tbsp chopped thyme leaves
09 - 300g creamy brie cheese

# Instructions:

01 - In a saucepan, toss together blackberries, sugar, balsamic vinegar, lemon juice, and salt. Heat until boiling, lower to a simmer, and mash the berries. Stir occasionally for about 7-10 minutes until thick. Let it cool off.
02 - Cut brie into slices about half an inch thick.
03 - Preheat a skillet over medium heat, making sure it’s not too hot so the cheese has time to melt gently.
04 - Spread butter on one side of 4 bread slices. Lay these slices butter side down in the preheated skillet. Arrange the brie slices on top and sprinkle thyme over them.
05 - Spread the blackberry jam generously on the remaining bread slices. Set these on top of the brie-loaded ones with the jam facing down.
06 - Butter the tops of the sandwiches, flip them, and grill until the bread is toasted golden and the cheese is gooey.
07 - Let sandwiches sit for a moment, then use a sharp knife to cut them into halves before serving.

# Notes:

01 - The jam thickens more as it sits.
02 - You might have to make them in batches depending on pan space.
03 - Keep the heat low to help the brie melt nicely.
