Salisbury Steak with Gravy (Print Version)

# Ingredients:

→ Meat Patties

01 - 1/3 cup marinara (tomato sauce)
02 - 1 onion, diced fine
03 - Salt as needed
04 - 1/4 teaspoon black pepper
05 - 1 pound ground beef (80% lean)
06 - 2 minced garlic cloves
07 - 1 teaspoon Worcestershire sauce
08 - 1 teaspoon dried oregano
09 - 1 teaspoon Dijon mustard
10 - 1 large egg
11 - 1/3 cup Panko crumbs

→ Mushroom Gravy

12 - 9 ounces of white mushrooms, sliced up
13 - 2 1/2 cups beef stock (low-sodium)
14 - 3 tablespoons cornstarch, dissolved into 1/4 cup water
15 - 1/2 teaspoon ground garlic powder
16 - 1 teaspoon onion powder
17 - 1 onion, sliced into strips
18 - 1 1/2 teaspoons Worcestershire sauce
19 - 1 tablespoon cooking oil

# Instructions:

01 - Heat a skillet and cook diced onion until it softens and turns clear. This takes about 4 minutes. Toss in minced garlic, cook another minute, then remove from heat and let it cool a bit.
02 - In a big bowl, toss together the cooled onions, ground beef, breadcrumbs, egg, marinara, mustard, Worcestershire sauce, oregano, salt, and pepper. Mix lightly, then shape the mixture into 4 or 5 oval patties.
03 - Warm some oil in your skillet over medium and quickly sear the patties until each side is golden, about a minute. Take them out and set aside. They won't be done just yet.
04 - Use the same skillet and, if needed, add a little oil. Cook sliced onions until caramelized, then stir in mushrooms and cook until golden brown. Put the patties back into the pan.
05 - Pour in the beef broth and add your onion powder, garlic powder, and Worcestershire sauce. Bring it all to a boil, then cover, lower the heat, and let it simmer for 15 minutes.
06 - Stir in the cornstarch-water mix and continue cooking while stirring for about 5 minutes, until the gravy gets thick. Add some salt and pepper if needed. Make sure the patties hit 160°F inside before serving.

# Notes:

01 - Go with ground beef that's 80% lean for great flavor.
02 - Shape the patties and refrigerate overnight to firm them up.
03 - Serve on top of mashed potatoes or polenta to soak up the tasty gravy.
