Take a mixing bowl, toss in the mayo, grated onion, ketchup, pickle relish, mustard, vinegar, and paprika, and give it all a good stir until smooth. Stash it in the fridge for now so the flavors mellow together nicely.

Pop a big skillet on medium heat and throw in the ground beef. Crumble it up as it cooks using a wooden spoon. Once it's no longer pink (about 5–7 minutes), drain off any extra grease. Spread the tortillas flat on a clean counter. Grab that chilled sauce and smear about 2 tablespoons on each one, leaving the edges plain.

Spread the lettuce evenly over all the tortillas, followed by a sprinkle of cheese. Then toss on the onion slices, chopped pickles, and tomato pieces so each tortilla gets its share.

Scoop the seasoned beef over the veggies. Use roughly a quarter of the meat mixture for each tortilla.

Fold the sides of the tortilla in, then roll it up snugly from the bottom. Pin it with a toothpick if it's not staying rolled. When ready, slice in half diagonally and serve while warm.
