Ground Beef Tostadas (Print Version)

# Ingredients:

→ Base and Protein

01 - 1 pound ground beef, lean
02 - 8 crispy tostada shells or small corn tortillas
03 - 1 can (16 ounces) of refried beans

→ Seasonings and Aromatics

04 - 2 tablespoons of oil for cooking
05 - 2 garlic cloves, finely chopped
06 - 1/4 cup of salsa (plus extra for topping)
07 - 1/2 onion, chopped small
08 - 2 tablespoons of taco spice mix

→ Toppings

09 - 1 diced avocado
10 - 1 fresh tomato, chopped up
11 - 2 cups of shredded lettuce
12 - 1/2 cup of cheddar cheese, grated
13 - Sour cream and cilantro leaves to garnish

# Instructions:

01 - If making your own tostada shells, heat your oven to 400°F. Set the tortillas directly on the oven grill and bake them for 8-10 mins until crunchy. Let them cool after baking.
02 - In a big pan over medium heat, warm up the oil. Toss in the diced onion and cook for roughly 5 minutes until softened. Stir in the garlic and taco spices, cooking for another 30 seconds so the aroma really pops.
03 - Add the beef to the skillet and let it cook until browned, about 6-8 mins, breaking it apart as it cooks. Spoon in the salsa and stir it around, cooking until warmed through. Remove from heat.
04 - While the beef is cooking, heat your refried beans in the microwave in 30-second bursts, stirring in between until they're nice and hot.
05 - Spread some warm beans on a tostada shell. On top of that, add a generous serving of the seasoned beef, followed by the lettuce, tomato, avocado chunks, cheese, and however much sour cream and cilantro you'd like.
06 - Serve the tostadas right away. Put some extra salsa on the side and enjoy while they're still crunchy.

# Notes:

01 - If your beans seem too thick, mix in a little water to loosen them up for spreading.
02 - Grate the cheese yourself for better flavor and a creamier texture.
03 - Only assemble the tostadas right before eating to keep the shells crisp.
