Crispy Beef Tacos (Printable Version)

Fast and flavorful tacos with crispy shells, seasoned beef, and cheesy goodness. Add your favorite toppings and enjoy in just 35 minutes.

# What You'll Need:

01 - 10 corn tortillas, fresh and soft.
02 - 1 and 1/4 cups red enchilada sauce.
03 - A pound of ground beef, 90% lean or higher.
04 - 2 cups shredded cheese, Oaxaca or Monterey Jack works great.
05 - 1 taco seasoning packet.
06 - 1 tablespoon olive oil to brush on tortillas.

# Steps to Follow:

01 - Crank the oven up to 450°F and wait until it's fully preheated.
02 - Brown the ground beef in a skillet. Add the taco seasoning and pour in the enchilada sauce. Stir it up, simmer, and pull it off the heat.
03 - Wrap the tortillas in a damp paper towel and microwave them for about a minute to soften.
04 - Brush one side of the tortillas with olive oil. Lay them oil-side down, pile on the cheese, scoop the seasoned beef, top with more cheese, and fold in half.
05 - Arrange the tacos on a baking tray, making sure none are touching. Pop them in the oven for 16 minutes or until golden and crisp.
06 - Give the tacos a minute or two to sit before you bite in. It'll make the outside extra crispy!

# Additional Notes:

01 - Nonstick trays work better since foil might cause tortillas to tear.
02 - Warm tortillas are easier to fold without cracking.
