Crank the oven up to 450°F and wait until it's fully preheated.

Brown the ground beef in a skillet. Add the taco seasoning and pour in the enchilada sauce. Stir it up, simmer, and pull it off the heat.

Wrap the tortillas in a damp paper towel and microwave them for about a minute to soften.

Brush one side of the tortillas with olive oil. Lay them oil-side down, pile on the cheese, scoop the seasoned beef, top with more cheese, and fold in half.

Arrange the tacos on a baking tray, making sure none are touching. Pop them in the oven for 16 minutes or until golden and crisp.

Give the tacos a minute or two to sit before you bite in. It'll make the outside extra crispy!
