Chop chicken into 1-inch strips unless already cut. Sprinkle some salt and pepper on them.

Whisk eggs in a shallow bowl. In a separate bowl, mix breadcrumbs, Parmesan (if you're using it), garlic powder, paprika, onion powder, salt, and pepper.

Coat each chicken piece in egg, then press it into the breadcrumb mix. For crunchier bites, repeat this step one more time.

Turn your oven to 400°F (200°C) to preheat. Line a baking tray with a rack and arrange the breaded chicken on it. Give the tops a light spray of olive oil.

Bake for 20 to 25 minutes. Flip them halfway through cooking, and check that they’re golden and the inside reaches 165°F (74°C).
