Crispy Baked Chicken Strips (Print Version)

# Ingredients:

→ Main Ingredients

01 - 2 large eggs, whisk until smooth
02 - 1 pound chicken breasts or tenders, sliced into strips

→ Breading Mixture

03 - ½ cup grated Parmesan (optional)
04 - 1 cup breadcrumbs, either panko or standard

→ Seasonings

05 - 1 tsp paprika
06 - ½ tsp onion powder
07 - ¼ tsp black pepper
08 - ½ tsp salt
09 - 1 tsp garlic powder

→ For Coating

10 - Spray-on olive oil

# Instructions:

01 - Chop chicken into 1-inch strips unless already cut. Sprinkle some salt and pepper on them.
02 - Whisk eggs in a shallow bowl. In a separate bowl, mix breadcrumbs, Parmesan (if you're using it), garlic powder, paprika, onion powder, salt, and pepper.
03 - Coat each chicken piece in egg, then press it into the breadcrumb mix. For crunchier bites, repeat this step one more time.
04 - Turn your oven to 400°F (200°C) to preheat. Line a baking tray with a rack and arrange the breaded chicken on it. Give the tops a light spray of olive oil.
05 - Bake for 20 to 25 minutes. Flip them halfway through cooking, and check that they’re golden and the inside reaches 165°F (74°C).

# Notes:

01 - Doing a double coat makes the outer layer super crispy
02 - Using a wire rack lets the chicken cook more evenly
03 - Let them sit for a bit before digging in
