01 - 1 lb ground turkey
02 - 1 tablespoon olive oil
03 - 1 packet taco seasoning or 2 tablespoons homemade
04 - 1 cup white or brown rice
05 - 1 ½ cups chicken broth or water
06 - 1 can (15 oz) canned corn, drained
07 - 1 can (15 oz) canned black beans, drained and rinsed
08 - 1 cup salsa
09 - 1 cup shredded cheddar cheese
10 - Salt and pepper to taste

# Steps to Follow:

01 - Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with taco seasoning, stirring to combine.
02 - Stir in the rice. Add the chicken broth or water and bring the mixture to a simmer. Once simmering, reduce the heat to low, cover with a lid, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.
03 - Once the rice is cooked, stir in the drained corn, black beans, and salsa. Cook for an additional 3-5 minutes to heat everything through.
04 - Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
