Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with taco seasoning, stirring to combine.

Stir in the rice. Add the chicken broth or water and bring the mixture to a simmer. Once simmering, reduce the heat to low, cover with a lid, and cook for 15-20 minutes, or until the rice is tender and the liquid has been absorbed.

Once the rice is cooked, stir in the drained corn, black beans, and salsa. Cook for an additional 3-5 minutes to heat everything through.

Sprinkle the shredded cheddar cheese over the top, cover, and let it melt for 2-3 minutes.
