Season both sides with salt and pepper. Slice the steak to fit nicely in your pan and pat it dry.

Warm up oil in a big pan over medium-high heat until it’s sizzling. Lay the steak down and get it browned for about 2-3 minutes per side if you like it medium-rare—or cook longer if you prefer. Let the steak rest on a plate afterward.

On low heat, melt the butter in a clean pan and toss in the garlic. Stir with a spatula until it starts getting golden, then quickly take it off the heat and move it to a bowl. Burnt garlic can sneak up on you—watch closely.

Cut the steak into slices going against the grain, pour the garlic butter on top, and sprinkle fresh parsley. Serve while everything’s nice and warm.
