Overnight Baked Banana Toast (Printable Version)

Cinnamon banana French toast with a sweet crumbly top. The best easy prep for a sweet start to your morning.

# What You'll Need:

→ Casserole

01 - 6–7 medium bananas, chopped
02 - 1.5 teaspoons ground cinnamon
03 - 2 teaspoons vanilla extract
04 - 36 g light brown sugar, unpacked
05 - 104 g granulated sugar
06 - 120 ml heavy whipping cream
07 - 480 ml whole or 2% milk
08 - 8 large eggs
09 - 450 g sourdough or French bread, cut into chunks

→ Streusel Topping

10 - 112 g salted butter, cut into pieces
11 - 1 teaspoon cinnamon
12 - 169 g firmly packed brown sugar
13 - 98 g all-purpose flour

# Steps to Follow:

01 - Dish it out warm. Pour on maple syrup or other fun toppings if you want.
02 - Put it back in the oven for another five minutes. Let the streusel melt and get crusty and gold.
03 - After most of the baking is done, lift out the dish and sprinkle the streusel on top nice and even.
04 - While your breakfast bake is in the oven, toss together flour, brown sugar, and cinnamon in a bowl. Throw in the butter, then smash with a fork or pastry tool until big crumbs show up.
05 - Bake for 35–40 minutes. Let it go until everything’s golden and it looks cooked through as you like.
06 - Let the dish warm up to room temp and heat your oven to 176°C.
07 - Scoop all the bread mix into your greased pan and spread it out. Stick it in the fridge overnight covered up.
08 - Dump the egg mixture over the bread chunks, add the banana pieces, and gently toss until it’s all soaked and ready.
09 - Crack your eggs in a bowl with milk, heavy cream, both sugars, cinnamon, and vanilla. Whisk it all up until totally smooth.
10 - Pile the bread chunks into a big bowl and leave them there for a sec.
11 - Grease that 33 x 23 cm pan with butter or some nonstick spray. Make sure it’s covered well.

01 - Chop banana slices into little quarters so you get banana pieces all through your dish.
